Hoisin Beef Noodles

Love ground beef but looking for something QUICK and outside of your regular routine? This is the perfect weeknight dinner, ready in 15 minutes or less! Serves 4-5

Ingredients:

1 lb lean grass fed ground beef

1 tbsp olive or grapeseed oil

1 tsp toasted sesame oil

1 onion sliced

1-2 garlic cloves minced

1 tbsp fresh grated ginger

1 large carrot julienned

2 cups Bok/Suey choy or Napa cabbage shredded

Veggies of choice: (diced zucchini, sliced mushrooms, sliced peppers, broccoli…)

250 g package of your choice Ramen, Fresh Chinese noodles or Soba.

2 tbsp Hoisin sauce

2 tbsp Oyster sauce

1 tsp Fish sauce

1 tbsp tamari or soy sauce

2 tsp rice or white vinegar

Toasted sesame seeds, chili oil and sliced green onion to serve

 Directions:

Heat the oils in a wok over high heat.  Add ground beef, spread out in the pan and leave to slightly sear for 5-6 minutes before stirring.  It will crisp up and the lean juices will absorb. Let some little char and crispy bits form, then scramble.

Add sliced onion, (and mushroom if using) stir-frying for a minute or so.  Add garlic and ginger and stir quickly, the garlic will burn.  Add cabbage and any other veggies, stirring through.  Last add the thinly sliced carrot, cooking ever so slightly to maintain crisp aspect.  Remove from heat.

Prepare noodles to al dente in boiling water (1-2 minutes).  Drain and add to the wok.  Turn heat back to high, and add the sauces and vinegar.  Toss well so fully combined. Serve topped with toasted sesame seeds, Asian chili oil and thinly sliced green onion.
