Susan’s Old Fashioned Cherry Squares
This is one of Susan’s old family recipes that was passed to her my Grandmother. It was in Susan’s head, and I have been somewhat desperately searching for it. I finally found it in one of her note books. Stained, faded and ripped. And bursting with love and memories.
We think it is a lovely treat any season, but with Spring and Easter coming up it is a perfect treat. Let us know if it reminds you of your grandmother too!
Ingredients:
Base:
1/2 cup butter - creamed
1 cup flour
1/4 cup white sugarbaking powder
1/2 tsp salt
1/2 tsp
Preheat oven to 350 F. Mix all ingredients together and press in 9 x9 baking dish.
Bake for 10 minutes. Cool.
Topping:
6 oz jar of maraschino cherries, drained
2 egg whites
1 tsp almond extract
1/2 tsp salt
1 cup brown sugar
1/4 tsp baking powder
Drain cherries well, pat dry and spread over baked crust
Place all remaining ingredients in mixer bowl and beat on high to stiff peaks. Should look like a carmelly meringue.
Spread meringue all over the cherries and base.
Bake at 400 F for 25 minutes.
Cut in squares and serve!
