Sausage, Veggie & Apple Tray Bake

This is a very simple weeknight favourite. The kids join in to choose the veggie/fruit mix, chop and set up the tray. Oven to table, perfect one dish family style meal. We choose 3-4 veggies and throw in apples or pears depending on the season. Pictured above fingerling potatoes, apples, parsnips, red onion and Kabocha squash. Another favourite is brussel sprouts, sweet potato, carrots and onion. Pick your favourites or just use up what’s on hand!

Ingredients:

2 Apples sliced

3 Parsnips peeled and sliced lengthwise

1-2 small squash, seeds removed and sliced in wedges

1.5-2 cups fingerling potatoes sliced in half lengthwise

1 Onion cut in 8 wedges

1 package of 4 sausage (pictured is Burke Creek Ranch Longanisa sausage)

2-3 tbsp Olive Oil

2 tbsp honey or maple syrup

2 tbsp each chopped fresh sage and rosemary

1/2 tsp kosher salt

1/4 - 1/2 tsp fresh cracked pepper

Directions:

  • Preheat oven to 400 F. Try to slice all the veggies/fruit in a uniform thickness to allow even roasting.

  • Mix all the vegetables and fruit in a large mixing bowl. Mix the olive oil and syrup/honey together, add salt and pepper and all but 1 tsp of the herbs. Toss evenly all over the fruit and veg.

  • Cover a large cookie sheet with parchment, and lay the veg/fruit out flat. Now nestle your sausages in amongst the fruit and veg. Your tray should be full, all ingredients touching but not stacked.

  • Bake for 30 minutes. Remove from oven. Throw on the tsp of uncooked herbs, makes this meal even prettier!

  • Straight to table and serve family style.
