Family Flapper Pie

Flapper Pie is an old rural Canadian recipe and it only requires eggs, milk, corn starch, sugar and a graham crust, all items that a farm pantry would traditionally have on hand. I find a lot of my urban friends haven’t had it so I thought it would be nice to share here. It is quick, delicious and best prepared just a few hours before eating. This is an old family recipe tweaked by some suggestions from the The Kitchen Magpie.

Serves: 6-8

Prep Time: 20 minutes

Cook Time: 10 minutes

Ingredients

For the Crust:

  • 1 1/4 cups graham crackers

  • 1/3 cup melted butter

  • 1/2 cup sugar

  • 1 tsp cinnamon

For the Pie:

  • 3 cups whole milk

  • 1/2 cup white sugar

  • 1/4 cup cornstarch

  • 3 egg yolks

  • 1 tsp vanilla

  • pinch salt

For the Meringue:

  • 3 egg whites

  • 1/4 cup sugar

  • 1/4 tsp cream of tartar

Instructions

  • Mix all the crust ingredients together (saving about 2 tbsp) and press rest into a 10 inch pie plate, in the bottom and up the sides. Refrigerate.

  • Mix pie ingredients and cook at medium, bringing to a boil and it will thicken. Make sure to stir constantly.

  • Beat the meringue ingredients together until stiff peaks.

  • Pour the filling into the crust and top with the meringue. Sprinkle the rest of the crumbs on the top and bake at 350 degree oven.

  • Bake until meringue browns, approximately 10 minutes but watch closely.

  • Cool in refrigerator and best eaten that day!
