Family Flapper Pie
Flapper Pie is an old rural Canadian recipe and it only requires eggs, milk, corn starch, sugar and a graham crust, all items that a farm pantry would traditionally have on hand. I find a lot of my urban friends haven’t had it so I thought it would be nice to share here. It is quick, delicious and best prepared just a few hours before eating. This is an old family recipe tweaked by some suggestions from the The Kitchen Magpie.

Prep Time: 20 minutes
Cook Time: 10 minutes
Ingredients
For the Crust:
1 1/4 cups graham crackers
1/3 cup melted butter
1/2 cup sugar
1 tsp cinnamon
For the Pie:
3 cups whole milk
1/2 cup white sugar
1/4 cup cornstarch
3 egg yolks
1 tsp vanilla
pinch salt
For the Meringue:
3 egg whites
1/4 cup sugar
1/4 tsp cream of tartar
Instructions
Mix all the crust ingredients together (saving about 2 tbsp) and press rest into a 10 inch pie plate, in the bottom and up the sides. Refrigerate.
Mix pie ingredients and cook at medium, bringing to a boil and it will thicken. Make sure to stir constantly.
Beat the meringue ingredients together until stiff peaks.
Pour the filling into the crust and top with the meringue. Sprinkle the rest of the crumbs on the top and bake at 350 degree oven.
Bake until meringue browns, approximately 10 minutes but watch closely.
Cool in refrigerator and best eaten that day!
