Slow Cooker Guiness Beef Dip
Here is a classic comfort meal, that never seems to go out. Adults and kids alike. The roast slow cooks all day in a delicious beef broth and tenderizes even further from a can of Guinness. We top with Swiss cheese, and banana peppers or fried mushrooms. A simple no effort meal, we set it up to cook in the morning before heading out for a long day moving cattle, and it is quick to serve up at days end. Slow cook minimum 8 hours, up to 12 hours. It might be your ‘new’ old favourite!
Ingredients:
1 can Guinness
2 cups beef broth (or bone broth)
1 tbsp Montreal Steak Spice
3 lb Grassfinished Beef Roast (pictured above Inside Round; Chuck or Cross Rib works great too)
1 tsp kosher salt
1 tsp fresh cracked pepper
1 tsp onion powder
1 tsp garlic powder
To Serve:
2 baguettes (sliced in lengthwise sandwich style segments)
8 slices Swiss cheese
Pickled Banana Peppers
Salt and pepper to taste
Directions:
Defrost Roast over night in refrigerator.
Mix spices all together in a little bowl and rub all over the roast. Let roast come to room temperature and sit for an hour or so before slow cooking.
Pour beef broth and Guinness in slow cooker, add roast.
Turn slowcooker to low, and cook all day, at least 8 hours.
Remove roast from broth, slice very thin (with electric knife if you have it)
Return beef to broth, and let your family build their own Beef Dip.
Ladle broth into ramekins, serve alongside Beef Dip and a simple green salad. Delicious!
