Instant Pot French Onion Soup
Tonight at about 4:30pm I had a craving for French onion soup. I have made this before with batches of our bone broth, but tonight I didn't have any on hand and wanted the soup now!
Solution? Went to the freezer and pulled out 2 meaty marrow soup bones and grabbed the Instant Pot. Seared the frozen soup bones, added 4 cups of water and 1 cup of red wine to the instant pot. Threw in 3-4 tsp Montreal steak spice and turned pressure cook to 45 minutes. While this was cooking I sliced up 2 onions, added 1/4 cup butter and couple tablespoons of olive oil to my cast iron. Added garlic, thyme, bay leave and the onion. Let these simmer and crisp up for about 20 minutes, stirring occasionally. Once the beef was done I checked it and shredded up the beef, pulled out the tendon and pushed the marrow out of the bones to stir up in the broth. Turned on pressure cook for another 10 minutes just to tenderize the beef a bit more. Then added another 1/2 cup of red wine to the cast iron and all the contents of the instant pot. Let this simmer for 10 minutes, divided into 4 bowls, topped with slice of crusty bread and shredded gruyere cheese. Broiled for a minute. Seriously we have never had better French Onion soup! Protein and nutrient laded with the added beef and marrow to boot.
