Mustard Roasted Grassfed Beef Tenderloin
Impress your Mother this Mother’s Day with a gourmet but ultra simple homecooked dinner featuring local ingredients.
Ingredients:
1 tenderloin tied in even size with kitchen twine at 2 inch intervals
2 tbsp dijon mustard
2 tbsp grainy mustard
6 tbsp unsalted butter
coarse kosher salt and fresh cracked peppercorns
Directions:
Bring defrosted beef tenderloin to room temperature on countertop (1 hour)
Fold tips under and tie with butcher twine so tenderloin is even thickness throughout
Preheat oven to 425 C. Whisk butter and mustard. Season beef all all over with salt and pepper, then coat entire tenderloin in mustard mixture.
Roast on parchment lined baking sheet, on upper third of oven until internal temperature reaches 125 C for rare, 135 C medium rare.
Let beef rest 15 minutes before slicing.
Excellent with literally anything but try our favourite Yorkshire Pudding!
