Perfect Yorkshire Pudding
I used to be intimidated by Yorkies, but turns out they are super easy and the absolute perfect classic complement to roast beef dinner. My kids just love them! Few tricks: Prep batter a couple hours ahead in blender and set in fridge. Then preheat oven, and make sure mini muffin pan with fat/oil in each cup is piping hot before batter added.
Ingredients:
1 cup flour
1 cup milk
3 large eggs (room temp)
1/2 tsp kosher salt
1/4 cup beef drippings, tallow or vegetable or avocado oil
Directions:
Add all ingredients to a blender, blend 1 minute til smooth. Set blender in the fridge for min 1 hour.
Preheat oven to 450 C, take a mini muffin pan and equally distribute 1/4 cup fat in all the muffin tin compartments. Place in oven and preheat tin for 10 minutes. Oil should be very hot!
Remove blender from fridge, blend quick again. Then working quickly pull muffin tin from oven, and pour batter into the tin. Each compartment should be 3/4 full.
Bake 12-15 minutes, to puffed and golden. Don’t open oven while baking as they will fall!
Serve immediately!
