Smash Burger

Want to make the perfect burger for Fathers Day? We have recently dropped our traditional bbq burger for the smash burger trend on the cast iron griddle.  We must admit they are spectacular and pretty much a weekly staple. 

Ingredients:

  • 1 pound grass fed ground beef

  • salt and pepper

  • your favourite burger buns & toppings

Equipment:

  • kitchen scale

  • cast iron griddle or pan

  • burger size square of parchment paper

  • burger press (or small cast iron pan)

  • sharp edge spatula

Instructions:

  1. Heat griddle or cast iron pan to high

  2. Weigh and form burger balls in 2 ounce portions

  3. Place one ball in centre of the griddle. Place your parchment paper on top then smash to as flat as you can (1/4 inch)

  4. Salt and pepper the burger liberally while it is frying, after one minute flip. If you are using cheese slice add it immediately, and cook another minute. When you remove from pan be sure to get all the crispy browned bits of burger.

Tips:

  • Butter and fry the cut surface of your bun

  • Typical smash burger sauce is a mix of mayo, ketchup, mustard and pickle relish or chopped dill pickles. We use a ration of 1/4 cup mayo and 1 tbsp of all the other incredients.

  • Garnish with crisp lettuce, tomato and pickle slices

  • These are so quick to prepare we just serve as they come off the griddle.
