Power Cookies

Our favourite energy cookies, packed with complex carbs and low sugar, I make them for nutritious carbs on long working days, for the kids lunches and to fuel their sports training.  Adapted from Planet Organic Power Cosmic Cookies

Ingredients:

  • 2 1⁄2 cups rolled oats

  • 2 cups spelt flour

  • 1 cup sunflower seeds

  • 3⁄4 cup pumpkin seeds

  • 1⁄2 cup shredded coconut, unsweetened

  • 1⁄4 cup ground flax seed

  • 3/4 cup unbleached cane sugar

  • 2 tbsp cinnamon

  • 2 1⁄4 tsp sea salt

  • 1 3⁄4 cups dark chocolate chips

  • 1 1⁄4 cups raisins

  • 1⁄4 cup water

  • 1⁄2 cup blackstrap molasses

  • 3⁄4 cup olive oil

  • 1 cup milk (or alternative)

Instructions:

  1. Preheat oven to 350°F.

  2. Line two baking trays with parchment paper.

  3. Combine dry ingredients : from oats to raisins.

  4. Combine wet ingredients: from water to milk.

  5. Stir dry and wet together until just combined.

  6. Portion cookie dough using small ice cream scoop style cookie dough scoop and place on baking tray.

  7. Gently flatten cookies.

  8. Bake for 16 minutes or until lightly browned.

  9. Cool on rack
