Baked Stuffed Spaghetti Squash
This was one of mom’s favourite side dish recipes. Most often she would prepare this with a roast chicken, and serve with crusty baguette.
Version posted here was finished on the Big Green Egg. 5 minutes in the smoker and it picked up a light and delightful smoky finish.
Ingredients:
1 Spaghetti Squash
2 tsp butter
½ cup fresh basil
1 cup cherry tomatoes chopped
¼ c fresh grated parmesan
¼ c crumbled feta
Salt and Pepper
Directions:
Preheat oven to 400. Slice squash in half, scoop out seeds and place squash halves cut side down on baking sheet. Cook for 35-40 minutes, until fork easily pierces through. Remove from oven and shred spaghetti with fork, leaving it in the squash shell. Stir through the butter, salt and pepper then all the remaining ingredients. Return to oven for a couple minutes so cheeses slightly melt. Remove and serve right from the squash halves.
